1 Cup Water
2 Tablespoons Organic Apple Cider Vinegar (Eden Foods)
1 Package Multi Purpose Baking Mix (Pure Traditions)
1 teaspoon Featherweight Baking Powder Sodium Free (Hain Pure Foods)
1/2 Cup Cassava Flour 100% Yuca Root (Otto's Naturals)
2 Teaspoons Italian Seasoning (Simply Organic)
15 Slices Pepperoni
4 Tablespoons Cultured Nut Cheese Sundried Tomato & Basil (FauxMage)
2 Tablespoons Grass-Fed Cultured Ghee (Pure Traditions)
1 Cup Pizza Pasta Sauce (Liberated Specialty Foods)
1 Optional Pro Series Bread Pan 7.75 x 3.75 x 2.75 (Fat Daddio's)
In large bowl stir together eggs, water, and Apple cider vinegar; set aside. In separate bowl whisk together bread mix, baking powder, cassava flour, and Italian seasoning. Slowly stir dry ingredients into wet. Let dough rest for a couple of minutes.
Shape heaping tablespoon of dough into a flat circle. Place half slice of pepperoni and 1/4 teaspoon pizza sauce in middle of dough circle. Close dough around stuffing and place in greased bread pan. Repeat until all dough is used, approximately 29 dough balls. Brush top of loaf with ghee.
Bake for 60 minutes, covered. Uncover and bake 10 more minutes. Serve warm with pizza sauce.
