No-Oatmeal Raisin Breakfast Cookies

Ingredients:

1/4 Cup Brown Butter Ghee (Pure Traditions)

1 Large Egg

1/3 Cup ()

1 Teaspoon Vanilla Extract (Simply Organic)

1 Tablespoon Ground Cinnamon (Simply Organic)

2 Cups Keto Oatmeal Unsweetened Instant Hot Cereal (Pure Traditions)

1/2 Teapsoon Baking Powder

1/2 Cup Raisins, Optional

To Prepare:
Preheat oven to 350°

Place ghee and egg in medium sized bowl and stir together. Add syrup and vanilla and mix until creamy. In a separate bowl whisk together cinnamon, cereal, and baking powder. Slowly add dry ingredients to wet mix until incorporated. Stir in raisins, if using.

Line a cookie sheet with parchment paper and drop dough by rounded tablespoonfuls onto sheet. Bake for 14-16 minutes until edges brown. Remove from pan and allow to cool. store cookies in a sealed container. Makes about 18 cookies.
