1 1/2 Cups Raw Honey (My Local Honey)

1 Can Canned Organic Coconut Milk (Natural Value)

2 Teaspoons Vanilla Extract Organic (Singing Dog Vanilla)

To Prepare:
Whisk together honey and coconut milk in a saucepan over low heat. Gently simmer until caramel thickens and turns deep amber in color; about 50-60 minutes. Remove from heat and add in vanilla. Store refrigerated in a sealed container.

For salted caramel; omit vanilla and add 2 teaspoons of sea salt.
